Ingredients (Serves 1)
6 pieces broccolini, stems removed
2 slices light whole grain bread
2 slices Arla® Gouda, divided
2 roasted red peppers
1 tsp. toasted pine nuts
Pinch crushed red pepper flakes
- Heat a medium-sized skillet to medium-high heat. Coat with cooking spray. Place broccolini in the hot skillet and cook, turning regularly, for 3-4 minutes, until slightly soft.
- Heat a panini press to medium-high heat. Coat with cooking spray. Place one slice of bread on the panini press and top with one slice of gouda, cooked broccolini, roasted red peppers, pine nuts, crushed red pepper flakes and second slice of gouda. Place second slice of bread on the top and close the lid of the panini press. Allow to cook until bread is golden brown and cheese is melted, about 3-4 minutes.
- Slice in half and serve.
