Havarti Mashed Roasted Cauliflower

Roasting cauliflower imparts a nutty and buttery flavour. Mashed and paired with Havarti is like having the cheese sauce built in!


1 large cauliflower, broken into florets 

4 cloves garlic 

2 tbsp | 30 mL
olive oil 

salt and black pepper to taste 

1 pkg | 200 g
Arla® Havarti Cheese, Roasted Garlic, coarsely grated 

1/4 cup | 60 mL

2 tbsp | 30 mL

1 tbsp | 15 mL
fresh chives, finely chopped 

salt and black pepper to taste



Preheat oven to 375ºF (190ºC).
Spray a large baking sheet with cooking spray. Place cauliflower and garlic on the sheet in a single layer, drizzle with olive oil and sprinkle with salt and black pepper. Roast for approximately 25 minutes, or until cauliflower is fork tender.

Remove from oven and carefully place cauliflower/garlic in the bowl of a large food processor. Add Havarti Cheese (set aside 2 tbsp for garnish if desired), cream, butter and season to taste with additional salt and black pepper, process until chunky smooth. Top with chives and additional Havarti Cheese if desired and serve.
