Edamame Mash Sandwich with Arla® Lactose-Free Cream Cheese


1 1/2 cups edamame
1/4 cup fresh cilantro
1 lemon, juice only
1 green onion, chopped
pinch garlic powder
2 tbsp olive oil
salt and freshly ground pepper to taste
6 slices seeded bread
18 thin slices cucumber
1 1/2 cups micro greens or arugula
garnish tomato and avocado slices (optional)



Place the edamame mash ingredients into the
bowl of a food processor and blend until smooth. If mixture
seems too thick add a couple of drops of water to create a
spreadable consistency. Cover and refrigerate until ready to use.
Spread one side of the 6 bread slices with Cream Cheese. Top
three of the slices with mash, cucumber and micro greens.
Optionally, add tomato slices and avocado. Season with salt and
freshly ground black pepper. Serves 3
